Does anyone know if it is possible to get a drawing and/or parts list for Four Winns trailers?

I need to adjust a roof mounted boat lift that was set up for a pontoon boat to match my H200 trailer bunk pattern (lengths, separation, angles). I guess I can make all the measurements myself, but it would seem there might be an easier way?

You could try calling FW; I've never seen or heard of anything along those lines being publicly available. Frankly, for something like that I'd hesitate to trust a drawing anyway. Better to use specific measurements of your own IMO.
