Keep two things in mind - 1) you don't want the transom sitting unsupported, and 2) you need around 6-8% of the total load to be on the hitch. Otherwise it's more likely to not track straight.

The guy at the hitch shop said moving it back a bit would still be plenty of weight on the tongue, but he did not actually weigh anything. You can't see it in the photo but the trailer has two smaller bunks under the transom. As it sits right now I can't completely lower my drive as it hits the rear brace of the trailer.

I appreciate everyone's help. I'm going to get in touch with ShoreLander on all of this as well. I can't seem to find the model of trailer on their site and I'd like to get their take on everything.

Your axel position looks about right relative to the boat, but that should be confirmed my measuring tongue weight. I cannot see your inner bunks in the picture, so cannot comment on their position.

I was able to find the correct manual for my trailer. From the exploded diagram of the winch setup it appears that there should be, what they call a bushing, over the bolt which I assume would help act like a roller as previously suggested.
