Well went back out today! It looks like 2300 RPM works out great with the trim all the way down. The speedo (I forgot the GPS) says about 18 mpg the boat is fairly planed out and the wake gives me a little pop. I still have our 21" pitch prop on (got lazy and didn't feel like changing it to the spare). Today was the 3rd real time out wakeboarding and I am enjoying the crap out of it. I am catching a little air (a foot or so) according to the wife and jumping about to the middle between the wakes. The water got to choppy because of the wind picking up so I didn't get to spend as much time at the end of the rope as I wanted. All in all a good day and learning more each time out.
