17x on the temp gauge is perfect and 47-50mph per spec on the top speed. I'd bring it to the dealer to read the ECU to see what the beep is.
4800rpm redline is per spec of Mercruiser. Mercruiser lets the OEM's pick anywhere from 4800 to 5200. Four Winns always plays it safe as they're a cruising boat not a sport boat. If you get something like a Stingray that's just built for speed (not comfort), they'll bring it up to 5200 or even higher in the programming just to get another mph or 2 for sales.
Sounds like you want a faster boat.. Probably should have done some research before buying. The top speed is listed right on the spec sheet.
