I do agree that you seem overpropped a bit and should probably correct that --- but there is an alternate solution for most of your problems.
REAL TRIMTABS -- like Bennett. They will get you on plane quicker with a heavy load--- allow you to stay on plane at a lower speed -- allow you to trim the boat evenly for an uneven load --- and not affect top speed at all.
(as a side benefit, when you lower them at idle speed they often cure wander/tracking issues)
I had a set I put on a boat 14 years ago after playing with several props and planing aids for many years -- I kicked myself that I did not spend the money sooner and get real trim tabs.
I sold that boat but took the tabs off first, and modified them to fit my current 240H ---the tabs are still going strong.
