Your minimum Plane speed is a function of your wieght/distribution, and hull design. It really has nothing to do with the prop itself. Move weight forward, thus less bow rise, you'll plane out at a slower speed.
Switching from a three blade to a four blade will give more bow lift. Adding pitch and the extra paddle will reduce Engine RPM at WOT, and may not contribute to a higher top end. four blades will usually give you more hole-shot, but adding pitch may negate that.
Looking at your boat/engine setup, I personally think you are just a little under-powered for your weight.... but this is coming from an SS owner.
