8 people is quite a load on a 20 foot boat with a 10 person capacity, so you should expect longer times to get up to speed. Looking at past specs, 5.0 motors on those boats at that time ran 14 1/4 or 14 1/2 x 19 props. Going to a 19 pitch will give you more bite which means better hole shot, but you will lose some top end speed. You should still be able to run 45 to 50 mph and your RPMs should be in the 4200-4800 range at full throttle with a typical load.
