New, bigger bilge pump or additional pump. (very difficult when the engine is in situ)
Tighten up the nuts on the rear cleats ( replace them with nyloc nuts ?); impossible on my Sundowner with the engine in situ.
Maybe the same with the engine vent covers ( I had to cut access holes on my Sundowner to do that)
I don't know about Mercruiser engines/ drives, but on a VP change the trim sender as the access to the cable in the transom is poor.
Clean the bilge thoroughly and consider repainting it.
Replace the seal where the exhaust enters the transom ( requires engine removal usually on a VP , maybe also Mercruiser)
Redrill ( and seal the edges of) the drainage holes in the stringers so water can drain properly.

To add to the above, put the drive back on before replacing the engine and make covers for the Y pipe tubes, you can back the boat in the water and check for any transom leaks that way.
