Can anyone identify what I have and how to maintain them? I believe the emergency wire is cut off the hitch.

Your wheel hubs dust covers have been replaced with the ones with grease zerks in them (bearing buddies, I think they call them), they do NOT get grease to the inner bearing if you depend on using the zerks. Take them off, throw them in the garbage and replace them with plain covers. Tear down your hubs, check the bearings and seals, repack or replace them, while you are in there check out the brake linings and drums. Fix anything that is broken or worn.
As far as the surge brake master cylinder goes, as long as it is working and moving freely, just check the fluid level under the cap on top. If your emergency break away cable is gone, look up the model on the net and find where it goes and replace it with a piece of stainless cable 1/16th inch or better.
Also take a good look at the lock mechanism on that coupler and make sure it locks to the hitch ball good.
Safety chains are looking a little grim, maybe replace with some nice stainless ones?
If your wiring all works, wrap them up with some loom to protect them and dress them up some.

P.S.
Also, if that is a FW trailer with the removable tongue, there is a hose with a quick coupling where the tongue inserts into the trailer. Look it over, if it is weathered and cracked, look into replacing it.
That would get you into brake bleeding, which we can reserve for another thread if needed.

I agree, that you cant/shouldnt rely on the bearing buddies to grease the bearings, inners or outer, but IMO they do serve a useful purpose.

When the bearings/hubs are hot after a long tow, then if you back into the cool water right away. It cools the hubs down quickly it will suck in a slight amount of water without bearing buddies. The spring pressure of the bearing buddys dont alow that to happen.

I would repack everything and leave them on myself.

I have had great luck using bearing buddies for the last 18 years or so. Never had a bearing go bad with them, and I boat and Salt and Fresh water. I wouldn't go without them. They will get grease to both bearing, if you pack the whole hub full of grease to begin with. Also, they keep a slight positive pressure in the hub to prevent the intrusion of water...especially when warm and dipped in cool water as mentioned above.

look in tech support. Its a messy job if you do it by hand. The best thing I have done to my trailer was replacing the axle with one that had Super Lube or Spindle Lube hubs that let you grease it without taking it all apart (as long as there is no water in there). This system is far better than bearing buddies. I did it the old fashioned way on my rear drive vehicles that had the old style bearings like on trailers and that is one job I'm glad I don't have to do anymore.

+1 on the super lube hubs. I still take them apart once a year (usually in the fall) to check the seal and the brake guts.

or, you can get a bearing packer and hook it up to your grease gun and make it a bit easier.
Ah yes the old days...manual bearing re-packs and drum brakes on our cars...don't miss either one...did many such jobs on my old VWs and 70s American cars....
