Don't just about ALL of the "Go-fast" boats have 3 blade props instead of 4 blade?

I would think!
It's what was on it. I will not spend extra money on props unless these don't preform at all.
I got to speak with the owner before the one I bought it from, he had it for eight years at Table Rock.
He said they played with different props and this was the best combination for getting out of the hole
and top end.
I will have to see it to believe it, but these engines do have and extra 100 - 150 hp each, so we will see.

I would think that a 19 to 22p - 3 blade would be best.

Well that would depend on how fast you intend to run the engines. (RPM)

With the 1.41:1 drives and 5000 RPM, and 21p props, you would get about 65mph. http://www.go-fast.com/Prop_Slip_Calculator.htm I used about 12% slip but you may get less slip.....maybe around 8-10%

But with the kind of HP you'll get with the 572's, I would think you could get away with running 23p 3 blades....and run around 70. (That's pretty fast  for a big boat like that though!!)
