Any ideas on good cooking on the boat? We're a Vista 258 and mostly visit marinas, but I would like to keep the wife out of expensive restaurants if possible. I'm just learning to cook at home lately, as she had foot surgery and has been laid up. |

We usually grill chicken or steak, make salads from a salad in a bag mix, and make some lipton packet noodles in a sauce pan. Makes for a easy,delicious, and complete meal. For breakfast we precook potatoes o'brien mixed with sausage at home before we leave for the weekend(saves time but can all be cooked in the same pan). On the boat we put the pre cooked ingredients into a skillet, pour in scrambled eggs, and when eggs are cooked top it with cheddar cheese. Put it in a bowl,add redhot, and you have a one pan meal that tastes great. Our dock neigbor cooks everything on the grill including homemade pizza's which are amazing! She even made sweet and sour chicken with fried rice yesterday...which I am eating the leftovers of as I type this....sooo I guess you can make anything you want with 1 burner,microwave and a grill. |

We use one of these when we are not makeing homeade pizza on the grill. Usually every Saturday night we are on the boat. ![]() |

For breakfast it has always been fried egg-n-bacon sarnies (theres one for you to work out). Unfortunatley I've had to give them the elbow! Cap'n what is that gizmo then? |

When we are at the boat, we cook primarily on the grill. I am lucky enough to have my own personal grill’n world at my marina. When we are on the boat, we cook on a table top grill at other marinas or at the beach. While at anchor, we have made some great meals on the alcohol stove. I’d like to share a simple recipe I make frequently on the grill. Although I didn’t create this recipe, I own it. Grilled Mexican Chicken 4 boneless skinless chicken breasts 1/3 Cup of Olive Oil 1 ½ Tablespoons of Chili Powder 2 cloves of garlic or 1/2 Teaspoon of dried garlic ½ teaspoon of Cayenne Pepper (If you do not like hot spices, cut this amount. But be brave, add some) Four slices of a course bread ½ pound of sharp cheddar cheese, grated 1/3 Cup of mayonnaise Mix olive oil, chili powder, garlic and cayenne in a bowl. Brush it on the chicken breasts. Mix cheese and mayonnaise in another bowl and set aside. Grill chicken breasts as normal. When chicken breasts are about half done, begin grilling the bread. When the chicken breasts are done, spread the mixture of cheese and mayonnaise on your four slices of bread, top them with one chicken breast each and continue grilling until the cheese mixture softens.
