Where are the sensors for the standard in-dash speed gauges?

Usually on the transom.
Either an electronic paddle wheel, or a pitot tube.

What engine/drive do you have?

I know on the Merc B3 it is in the outdrive.

B3 - yeah the mechanic says the water is brought back into the boat from the drive and up to speed sensor in dash. Very WW2.

Yep there is a hole on the leading edge of the drive. If it gets blocked the speedo doesn't work.
Also there is a hose that connects from the boat to the drive. If this is damaged or disconnected = no speedo worky. My mechanic always forgets to hook this back up when he pulls the drive. Luckly it is easy to connect, even in the water if you don't mind getting wet.
