The boat didn't originally come with an anchor. As to the head, your choices will likely be:
1) Stop by a marina and have it pumped out before you load it on the trailer 2) Make up your own pumping apparatus (a Google search will turn up a few people who have done this and seem to be happy, but not many) 3) Disconnect the pump-out plumbing and make it a non-pump-out, meaning that you'd have to remove the toilet from the boat to empty it.
RV places can't pump it out; the fittings used on RV's are different than on boats.
I have both the Seloc and the Volvo full set of shop manuals. I find both to be lacking in some way for almost any job. I can't speak to the Merc factory manuals.
As to boat features, do you have the thick owner's manual that has all the wiring diagrams in the back? That's as much as you'll be able to find in terms of written documentation. Where that leaves off, this forum picks up, so fire away with questions. The experience of real users will likely be more useful to you anyway.
