I find 1 gallon buckets of damp rid at Lowes and place a couple in the cabin and cockpit. Here in the North East it will freeze but it still seems to work when temps get lower. I assume mold won't grow when its freezing in the cabin. Also, the cover needs to have plenty of vents. This will help move the air. If you are using shrink wrap the vents need to be towards the top and there needs to be an opening at the bottom to help circulation. If it is really bad you can install a vent fan to help. I had problems with mold on a mooring cover during the summer. It is very difficult to keep it out especially when you just have to cover it when its still a little damp sometimes. The damp rid helped a ton even in the summer.
