I'm interested in your thoughts on stepping up from a 180 3.0L to a 190 4.3L. Perhaps premature until you get it out a few times....
We actually just got back from a day on the lake. We've had some crazy weather up here since last fall and this spring has been no exception. Today it hit 90 degrees when our normal is around 60 so we took the day off from work and headed up to the lake.
Along with the two demo rides we've had in the last couple of weeks I can say that I've not been disappointed with our decision. This is what we like so far:
It's only 13 inches longer, but the added space is very evident.
The V-6 is so MUCH quieter and smoother than the 3.0
We were also surprised how smooth it was in the chop today. (It was very warm, but also VERY windy). Of course it's not as good as a larger boat, but I thought it was a noticeable improvement over the 180.
I want to make sure I say though that we loved our 180. It's a great boat for the money and that 3.0 never let us down and did everything we wanted it to do. We were just lucky enough to have the means right now to get what we really wanted in the first place.

I think you should go up to 200 or 210.....and have V8
We actually can't go any larger unless we find another mooring. The largest we can have in our mooring field is 19 feet. We feel the 210 will be our next boat, but it won't be next year.
