This sounds like your motor went into a "Limp Home Mode" because of an over heat alarm. The alternative is that you had something blocking your water inlet on the leg like a plastic bag. There is also a very slim chance you have a faulty temp sender or failed impeller but highly unlikely on a new boat.

If the ECU sees a temp that is too high it limits the revs to about 2000rpm to get you home and to limit damage to the motor. To me it seems you shut down and had heat soak from the motor still being hot, but with no water running through. That heat soaked water may have given a very high reading on the temp sender when you started up again, which would have send the ECU into limp home. Often you would get beeping from the alarm or a flashing "check engine" light if your boat has one.
By your 4-5th try, colder water would have been pushed through and lowered the temp and so the ECU would release the "Limp Home Mode" and allow you to rev above 2000rpm.

Heat soak can happen if you are running hard or at WOT for a while and then shut down soon after. If you allow the motor to just idle for a minute after a hard run you will find there is less/little chance of heat soak. Then if you see the temp spike when you start up again, let it idle until the temps return to normal.

That makes perfect sense. Thank you very much for the info. The temp gauge wasnt high and no check engone light. But still. We have lots of shallow mucky channels so a cloged inlet could be likely. A water impeller replacement is an annual job for most boats out here. I think my water pump is inside the engine compartment. No more dropping the lower unit,
