When I power up to get to plane and especially when pulling something, the boat pulls hard left. What can be causing this?

Do you have your live well full?

The live well is empty. I'm thinking it has to do with my prop or the lower fin or the engine alignment.

There is a thing called torque steer that applies to boats as well. Just not as bad as a car or truck. but pulling to the left is weird. Maybe your hydraulics are going bad or your low on fluid and it allowing the motor to torque over. Is the wheel moving when this happens?
