I've been thru lots of props... Alum and SS; 3, 4 and even 5 blades, and I was disappointed when I tried a 4 blade alum on my last boat compared to others. If you just want a respectable increase in overall performance, I would start with a 3 blade SS (assuming your present is alum), matching the dimensions you currently have. That will both improve hole-shot, and top end as the blade flexes less than alum. I think you will see the most notable improvement that won't break the bank, and look good.
As far as the options you have presented, Assuming you are not totally disappointed with present performance, go with the pitch that is closest to that. the 14x21 has a slightly smaller diameter, and will result in increased RPM, and should still improve hole-shot with additional blade count, but slightly slower top-end.
From your post, you are running a 5.0 on a 190, so power shouldn't be an issue at all. In my experience, this difference in performance will not be as much as changing to a 3 blade SS of the same size.
