New rollers will have more pronounced grain compared to end of life rollers, but the color no. The effects of UV damage even in a short term of a few weeks exposure will make the color hue slightly different then new but the mixing of colors at the factory is a VERY precise operation constantly checked by lab techs for it's accuracy. It's not just a bunch of good ole boys throwing ingredients in a 5 gallon bucket scratching their heads and saying "well that looks right".
It is better to do the whole boat at once so everything is matching and aging at the same rate, but personally for me it just doesn't make monetary sense at this time to replace a whole interior when only 2 seat backs are looking old. I am redoing the whole bow so it does match using a more modern vinyl. Someone REALLY OCD might notice the difference between the bow area and cockpit area, but being the whole cockpit area is 8/10 condition it can wait and those really OCD people aboard my boat will have to deal with it for now.
