Your boat sounds great!

If you get an ipod touch, ($200) you can use it as a wireless remote via wifi to control itunes on your mac mini. The mac mini can set up it's own wireless network on the boat so you won't need a separate router. On the screen of the ipod you can then browse and control your entire music library, movies etc. including volume on your mac mini from anywhere on the boat. The Genius function is fantastic as it digs deep into your library to put great playlists together. You can also dramatically improve the sound quality from the mac mini by adding on an aftermarket digital to audio converter like the Apogee Duet ($500). I run that system through my hifi at home and it sounds absolutely amazing.
