Almost all of the cockpit cup holders on my 2000 298 Vista are crumbling at the rims, probably due to 10+ years of UV exposure. As such, the rims are easy enough to remove but it seems that the main body of the cup holders are glued in or something.

Two of them are mounted near the sink in the cockpit but some of them are mounted in the corners of the backrests of the upholstered cockpit seating.

Any experience or ideas on how to remove them without screwing up the molded fiberglass and upholstry?

I've replaced all of mine except the ones on the helm, they have the little notch for a coffe cup handle which I can't find a stainless steel replacement. I replaced all the others with a stainless steel version. The one in the upolstery are held in by friction and just need to be pulled out with a little bit of force. The ones around the wet bar did have some sort of adhesive or just sealant but over time that had broken free and they easily pulled free. I did have to hog out a few holes for the the new cup holders since the diameters were slightly larger than the old ones.
