Any tips to taking the steering wheel off so I can pull the dashboard to replace the fish finder?

Basically there are 2 ways the wheel can be mounted: splined shaft or a tapered shaft with a woodruff key. For the former you can use a puller. For the latter loosen the nut holding on the wheel unscrew it to the end of the threads. The take a block of wood and a hammer. Put the block of wood over the nut and rap it with the hammer, that will break ine grip of the taper. Look for the woodruff key it fits in a slot in the shaft and may fall out. Use grease when re assembling.

You may well be able to remove the wheel from the hub; they are held together usually with 6 countersunk allen bolts. Both my previous Sundowners and my current Vista had that sort of attachment.
