The interior of our boats are made of a mix of real stained wood and laminate over particle board, what do people use to clean and protect? Just Pledge or other house stuff?

On my 298 Vista, everything is either the laminated wood or real wood that is shellacked so all I use is water on a clean rag and then buff it with a dry one. Can you tell I drink Nat Light?

Regular household wood cleaning products have worked well for me. It is, as was stated, just veneer or otherwise finished woods, nothing really 'marine specific' about the surfaces. That's a more common style in most newer powerboats. It's a climate-controlled basically indoor space. I think some of the wood is still teak but stained to match the other cabinetry.
