First off, welcome to the board.
There are several possibilities (which I'm sure you already realize) so it is tough to even guess without some more information. As very general suggestions, I would check all the electrical components (cap, rotor, wires, plugs) and I would also consider having the carb rebuilt. Your acceleration issue sounds like a carb problem to me. Are you having ANY problems at all when running at cruising speed, or are they all starting/idling related? Give us some more info if you can.
I once had a bad coil that would give me trouble starting when hot. It would take awhile to get it started again, my theory was that the time to try to start it allowed it to cool down just enough to run again. A cracked distributor cap has also given me baffling performance problems in the past.
Pretty weird that 2 separate shops haven't figured it out. Since you're new, may I suggest that you also post this under the Engine forum rather than the Horizon forum? You'll get a lot more reads. I personally never read the forums for any of the other boat models because I don't own one of the others and know nothing about them. I do read the general, engine, accessories, and trailering forums regularly though. I suspect there are others who do the same.
