Sound like the dealer needs to make this right for you.
There is no adjustment that I know of for the high speed jets (other than replacing the jets with a different orifice diameter).
If it hesitates or stalls when you hit the throttle fast, then it would be the accelerator pump. However, the accelerator pump is not necessary if you gradually speed up to full throttle. I don't think you were describing the accelerator pump problem, but I will mention that many carb rebuild kits come with the wrong accelerator pump...the black ones are not ethanol proof...the green (silicone) ones are.
Other sources of fuel starvation could also be suspect:
. fuel pump
. fuel filter
. fuel inlet screen at carb
. carb float bowl adjustment
. anti-siphon valve at fuel tank
