Sorry if this is a dumb question. First time with 2 of everything! :-)

Do I fill each tank equally on each fill or do I somehow use the valve in the hatch to equal out the tanks? I assume fill each tank equally but then what is the valve for?

I top off each tank, and have the valves set to feed each engine off its respective tank.

Be sure to keep the crossover valve shut because one engine will tend to pull fuel from the other tank.

Those valves will not move fuel from one tank to the other. They only control which engine has access to which tank.

I keep the left and right open and the center valve closed. Each engine gets it's own tank. When I fuel up, I put an equal amount in each tank. When I notice a big difference between tanks on the guages, I might thow a few extra gallons in the low side. I never fill my boat, but if you do then this is moot.

Once in a while I open the middle valve and let the engines draw from both tanks. Usually when fuel is low and uneven this will balance it out.

One engine always burns a little more, plus your generator only draws from one tank.

I keep each tank isolated except for when I needed to balance things out.
