I wouldn't worry about it being a fuel guzzler. Fuel use is based on Horsepower Used, not Horsepower Available. In other words, the 4.3 and 5.7 would use about the same fuel while cruising at 35 mph. (or any other equal speed). If the bigger engine leads you to always cruise faster, then it will use some more fuel, but at the same speed, it will use approx the same fuel.
The bigger engine will also use 1/3 more fuel while idling, but the fuel you use while idling is not significant enough to worry about.
