I really like this setup! We have found that anchoring out we rarely need the A/C because of the cooling effect of the lake, but a smaller inland lake in Florida might be different. We haven't run ours for 4-8 hrs yet, but we do run it off the inverter for a while to cool the cabin before we go to bed. After the cabin is cooled down we shut the A/c off and run the "house fan" only off the inverter.
If you plan to run the A/c a lot I would consider a bigger alternator and something like a 40amp+ smart charger. Those golf cart batteries take a while to charge once they get depleated. Considering the size of your cabin/ Ac unit it should cool down pretty quickly and you should be able to run at a low duty cycle to keep your batteries longer.
